Crispy Halloumi Fries

 INGREDIENTS:

  • 7 oz block halloumi cheese

  • 1/2 cup panko breadcrumbs

  • 1/2 cup plain breadcrumbs

  • 1/2 cup all-purpose flour

  • 2 large eggs

  • 2 tsp water

  • 1/2 cup olive oil for frying

  • 1/2 cup plain Greek yogurt

  • 1 tbsp lemon juice

  • 2 tsp honey, plus more for garnish

  • 1/4 cup chopped pistachios

 METHOD:

  • Step 1 :  Slice halloumi into 15 1/4-1/2-inch "fries." Place a cookie cooling rack on top of a sheet pan or piece of parchment paper.

  • Step 2 :  Add panko and plain breadcrumbs to a shallow bowl. Mix to combine. Season with salt and pepper. Add flour to another shallow bowl. Season with salt and pepper. Add eggs and 2 teaspoons water to another shallow bowl. Whisk until combined.

  • Step 3 :  Dredge halloumi in the flour, pat off excess. Coat in egg, let excess drip off. Transfer to breadcrumb mixture and coat. Dip in egg one more time, and then coat in breadcrumb one more time. Store on cooling rack.

  • Step 4 :  Heat a large cast-iron skillet to a medium heat. Add 1/4 cup of olive oil. Once the oil is hot (use the bottom of a wooden spoon and if bubble start popping up around the spoon, it's ready), add half of the fries. Fry until golden brown and crisp on all sides. Transfer back to the cooling rack to drain off oil. Repeat with remaining oil and fries.

  • Step 5 :  While the final batch of fries fry, add Greek yogurt, lemon juice, and honey to a small bowl. Mix to combine. Sprinkle in a little bit of salt. Stir.

  • Step 6 :  To serve the fries, arrange them on a platter. Drizzle with extra honey. Sprinkle with pistanchios. Serve with dipping sauce.
